3/4 pint of Red wine, doesn't seem a meagre amount to me and would be quite sufficient to cook this dish. You will also get the juices from the meat and vegetables in the finished dish.
I would use a casserole with a tight fitting lid.

You can always add more liquid (stock or just water) if you think it's getting too dry at any point.
