Flourless cake

I made a flourless cake with ground almonds and cooked oranges pulped- why did it not rise?

Hello MarionAnn,

I don’t know what recipe you are following but a flourless orange cake needs something to make it rise. It can be baking powder or air whisked into egg or a combination of both.

It sounds to me like a half teaspoon of baking powder isn't enough, but if it is Nigella's recipe for clementine cake & you are doing a half quantity then it should work unless the tin is too wide & the mixture is spread too thin. What are the actual ingredients & the quantities in the recipe you were following?

And you should also bake it immediately after mixing so you don't lose any of the created air ....

Hello Marion,

I found that recipe on line. I think you should beat the egg yolks and sugar until they are very aerated and light in color then be very careful when you fold in the whites to make sure you don’t loose any of the air and I agree with QoP that increasing the baking powder would help, 1 teaspoon perhaps.

I like the sound of this recipe... flourless AND fatless... I've found the recipe and will have a go at this some time.
