Hi Lindsay - trying to get ahead for some visitors at beginning of May - do you think I could make a quiche, ahead of time, and freeze it?

Hello Marion,

Yes.

Sometimes we freeze the baked quiche and sometimes we freeze just the baked tart case the fill and bake it in the day.

Hi Marion,

It depends. If you have time (and the space) to bake it fresh on the day you’re going to serve it, it will be at its best. I would prepare my filling ahead, cook the bacon, grate the cheese, mix the cream and eggs etc.

If not you can finish it, freeze, defrost and warm it in the oven before you serve it.

On the topic of Quiches.....

I want to do a quiche with filo pastry as it is a little lighter, do I need to blind bake it or just add the filling and bake?

I would say that it should be baked blind first.
