coconut pyramids

My aunt (many, many years ago) made coconut pyramids, she used an egg cup as a mould, I cannot find a recipe anywhere, I take it that it would be butter, sugar, and coconut, but I don't know if any egg was added, any ideas? Many thanks.

Coconut Pyramids

Hello japonica,

Could they have been a version of English Madeline’s perhaps?

We do not have a recipe here online but you could see what Google brings up.

Best wishes

coconut pyramids

Here is a simple recipe I used many years ago when the children were small.
Beat 2 eggs, stir in 225g desiccated coconut & 150g caster sugar. Leave it for about 20mins then using an egg cup (and wet hands) shape the mixture & place on non-stick paper on a baking sheet with a piece of cherry on top. Bake at 180/160fan/Mark4 for 25-30 mins until pale gold.
Makes about 16.

Hope this is what you're seeking!
