Twice I have tried to make Delia's marzipan recipe for her Christmas cake and although I followed the recipe very carefully it turned out too soft and wet to roll.I ended up adding more icing sugar and then pressing it onto the cake with my hands.Although it worked out in the end I would like to do this perfectly so that I can lift it onto the cake with a rolling pin.What do you suggest? Thank you.

Hello Heather,

Assuming you are using this recipe I would say that you’re probably not cooking the egg mixture enough before you cool it and add the almonds. We made it quite a lot whilst testing the cake book. It could be that the heat needs to be a fraction higher. The mixture does get quite thick.

Thank you Lindsay for your advice. I have just realised I was using an older recipe of Delia's for marzipan which had lemon juice and an extra egg yolk in it.
I am confident now it will work well. With your help and the updated recipe I am well prepared for my next Christmas cake!
