I am planning to make my own wedding cake using delia's classic christmas cake recipe. I looked at the scaling up chart but it only goes to a 10" square. I would like to make a 12" square. Can you help me with the scaling up required for this? also I would like to leave out the mixed peel but should i be replacing this with something else?many thanks

Hello rhubarbcrumble,

I would do (but haven’t tested) a 12 egg fruit cake recipe for a 12inch square cake tin. If you don’t want to use the mixed peel you can substitute it with dried fruit, glace fruit or nuts, whatever you like.
