I have cooked a classic fatless sponge and followed the recipe exactly. But it emerged with a slight dip in the centre. What would be the reason for this?

Almost the same answer as I just gave to Cinnamon. The reasons for this can be undercooking, incorrect temperature or opening the oven door too soon.
