problem with choc mascarpone cheesecake!

Hi. I followed this recipe exactly...but when I added the melted chocolate to the mascarpone/fromage frais mixture it started to solidify! I folded it but it didnt really all mix in...just small chunks of choc!! Have cooked it as it was and havent tried it yet as uts still this what is supposed to happen? I usually dont have any problems with Delias recipes :(

Hello Caro.Rad,

I’m sorry to hear that you have had problems with this recipe.

I haven’t made this recipe myself but from what you say I expect the melted chocolate had cooled too much so when it was added to the cold mixture the cocoa butter instantly solidified. If melted chocolate is still warm it will usually blend with a cold creamy mixture quite easily.

There may well be an error in this recipe so I will add it to our list of things to be tested.

My fingers are crossed that your chocolate chip or chocolate marbled cheesecake will taste delicious anyway.
