Choux pastry

Hi there - I want to make profiteroles for Saturday lunch, but not sure I will have time on the morning. If I make the buns, not fill them, on Friday will they be OK or will they go soft even without the filling? Ages since I made them!

Hello Annie,

They will probably go soft.

You could make them, release the steam, cool them and freeze them, then on the day, pop them on the oven (from frozen) to crisp up. Probably 5 minutes or so at 180C.
