Royal icing & dried egg whites

Dear Lindsey,

I'm sorry if this has been asked before, but I can't seem to find a link on the website.

Do you have a recipe using dried egg whites in royal icing?

My Mother is 89 years old, and loves Delia's Creole Christmas cake which I have made for years. Previously, I used to cover it with glace fruits, (as she doesn't like nuts or prunes). However I have now retired and find the cost of these too prohibitive.

Would be very grateful if you could help.

Royal icing with dried egg whites

When I make royal icing I only ever use dried egg whites. I follow the instructions on the packet to reconstitute the egg white powder & this tells you how much powder makes what equivalent of fresh egg white. You then use your normal royal icing recipe (or the recipe on the box of icing sugar) & away you go.
