Hi Lindsey,
I normally put the sugars and ground almonds into a bowl and then add the egg. I see on Delia's recipe she whisks the sugars and egg over hot water then adds the ground almonds. Does this method produce a better marzipan? Many thanks.

Hello possum24,

I have only made Delia’s marzipan recipe for as long as I can remember so I can’t tell you how they compare. I like Delia’s method as it cooks the egg, then the almonds are added once it has cooled so they don’t go oily.

I’m sure your recipe is good too.
