Rillettes of Duck with Confit of Cranberries

I want to serve this as a starter and would like to plate it up individually with the cranberry and watercress before taking it to the table.

Should I turn the terrine out and then try to cut it into slices or should I try to slice it in the loaf tin?

Hello Lucy,

You can turn the terrine out and slice it or if you have enough little dishes or ramekins you could put the rillettes into these instead of a terrine so they can be served directly onto your starter plates with the compote and garnish.
