Sponge & Buttercream

Hi, I'm making a vanilla sponge cake with buttercream/ chocolate filling and covering it with sugarpaste, for a birthday party. How far in advance can I make the cake as I'm busy leading up to the party!!

Hello Marie-lu,

You could make and fill your cake ahead and freeze it then you only have to defrost and decorate it.

If you’re making, filling and decorating I would only do it 2 - 3 days ahead.

Thanks for that! It was what I thought! So after the cake is cut it can be put in the fridge, how long for? And is there a book ( maybe delia s cakes?) I can buy that tells me about storage and a cake chart for adapting recipies for different size tins? Thanks again

Hello Marie-lu,

It needs to be the freezer not the fridge.

There is a video technique on storing cakes alongside the cakes cookery school.
