do you need to refrigerate an 'unfed' cake?

Hello,

I make Delia's classic cake every year, using a type of apple brandy that is called 'Applejack' that has been made in the USA since the 1820s (rather old for the USA). I soak the fruit in it, then bake 10cm squares using a Silverwood 12" square with dividers.

My question is this: Usually I feed the cakes with applejack for several weeks before giving them as gifts at Christmas. If I don't feed them as they go to non alcohol users, must I refrigerate them between now and Christmas? Or will they keep okay at room temperature?

Hello Nate,

They sound wonderful.

Just well wrapped in an airtight tin in a cool place they will be fine even if you don’t feed them.
