Hi I'm planning to make delia's venison casserole from "Christmas easy" for the Christmas season. I am having difficulty getting rich madeira - could I substitute sherry and is so what type would be equivalent please. Or would you recommend something else? Thanks Chris

Hello Chris,

You could do Stout with some Port
or
Red Wine and perhaps add a tablespoon of redcurrant jelly at the end if it needs a little sweetness.

venison stew

When I was about 12 my granma(not the best cook, but with the most alive and warm personality I have ever known)she was more up for taking You to or educating You with great cooking/eating/food.... In Italy or rural France.(She was a big fan of those Elizabeth David adventures and essays)I have just started reading them. She only once made a venison stew. It tasted like she had cooked an ole welly boot! Well... We did have a giggle about how bad it tasted... If only.... she had had an ask Lindsey?! : )
