Pork Chops Baked with Wild Mushrooms and Creme Fraiche

I made the revamped version of this recipe for the first time this evening, having made the original version with cream loads of times in the past. I was very surprised though on opening the parcel at the end of the cooking time to find that the creme fraiche had gone into like a thick solid cottage cheese like consistency! Did I do something wrong?

PS the dish tasted delicious and I will make it again, but I think I might go back to using the cream :)

Hello June J,

I don’t think you did anything wrong. I think it is to do with the consistency of the crème fraîche when the recipe was originally tested. Crème fraîche seems to be so thick nowadays. I know that Delia makes this recipe often so I will ask her about it tomorrow.
