Last-Minute Brandied Christmas Cake

Hi Lindsey

Apologies if this question has already been asked 100 times!

I'm making Delia's Last-minute Christmas cake this year and have a couple of questions:
1)Can I make in Nov or should it be made a couple of weeks before Christmas?
2) I want to leave out the 50g Brazil nuts and 50g mixed chopped nuts, can I add 100g extra fruit in place or will this change the consistency? I plan to marzipan and ice the cake so not using the nuts on top.

Even though this cake tastes lovely made at the last minute, it will taste even better if it’s baked in advance.

Yes you can substitute the nuts as you suggest.

Feeding cake with brandy?

Thanks for your reply Lindsey, that was really helpful. The recipe states it will keep moist for 3-4 weeks, I'm making this weekend, so just under 7 weeks until Christmas, would you recommend feeding the cake with Brandy as you would normally do so it stays moist right up until Christmas?

Yes I would feed it just a couple of teaspoons of Brandy or Armagnac each week
