Can I marzipan my Christmas cake today?

Can I marzipan the cake today to ice in just over two weeks' time, ready for Christmas?

Icing Christmas Cakes

Hello PhilGlew,

It’s too early to marzipan and ice your cake today.

If I do marzipan and fondant icing, I do it on the same day about a week before. I always brush the cake with sieved apricot jam first then again before I ice it.

If you are doing royal icing, the marzipan needs to dry out on the cake first. This usually takes about 3 – 4 days but many cooks leave it about a week.

Some cooks leave their marzipan to dry out before they do fondant icing but I don’t do this and have not had any problems.

Anyway I would say ideally start no more than 2 weeks before you want to eat it.
