using stem ginger in jam

I have used up the unripe apples from one of our small trees -2 kilos.I had already made jelly and apple preserve so wanted to try a new flavour. I did it the same as normal;cooking the apples jently and sieving overnight.1 lb sugar to 1 pint liquid.Then added a jar of chopped preserve and some pectin to be sure.I can not get the jam to gel whatever I do.It looked OK when tested so I potted it up but it was the consistency of honey. Emptied jars and did it again adding a bit more pectin -no joy.What am I doing wrong ?
