I dont think anyone knows the answer.Still -it tastes very nice and would be good on icecream - or in a pudding -if I wasnt on a diet. After giving it much thought and not wanting to waste 8 jars opf it I might reboil with a lot more pectin.My apples were a bit unripe so they may have had less pectin than normal .
