Iced lemon & poppy seed muffins

Hi Lindsey,
Hope you can help! Have baked about 1/4 of the recipes in the new baking book and all have been resounding successes and several made several times. Yesterday decided to make the above muffins for a coeliac friend so substituted Doves Farm gluten & wheat free flour for regular and also used gluten free baking powder. They were truly dreadful. Tough and chewy as old boots, stuck to the muffin liners as well when tried to remove them when they were cool.
I have made muffins several times before and had perfected the art of getting them really light so where on earth have I gone wrong?? Should I perhaps have added extra baking powder to the 1 dessert spoon stated in the recipe? Hope you can help as I'd love to bake some other things also for a friend who is always left out in the cold when there is lovely cake on offer.

Gluten Free Muffins

Hello Margaret,

I’m sorry that you have had problems with the gluten free version on the Lemon and Poppy Seed Muffins. Our test results for all the gluten free muffins were successful but will try them again as soon as I can to see if I have any of the same problems that you have had.
