Substitute for double cream

I live in Portugal and fresh double cream is not available. I want to make truffles and choc petit fours. Can i substitute double cream wih condenses milk?

Chocolate Truffles

Hello Maoiliosa52,

I think it is possible to do this but they will be sweeter. I have definitely seen recipes elsewhere that used condensed milk. Do you have a long life liquid cream or a crème fraîche available in Portugal that you could use?

Perhaps if your only option is condensed milk you could try and get a dark chocolate with a higher percentage of cocoa solids.

Emergency cream

I've had this recipe for very many years.

To make Emergency cream


"100ml/4oz warm milk 150g/5oz just melted unsalted butter (double cream) OR 100g/4 oz unsalted butter
(whipping cream) OR 75g/3 oz unsalted butter (single or pouring cream)

Put ingredients in the work bowl of the food processor and process until fully blended. Chill before
use, then stir or whip as required.

Makes about 225ml/8oz cream "

Welshcookie - cream

In your recipe for emergency cream it calls for milk. Does it have to be fresh full milk or can semi-skimmed be used? Could I use UHT semi-skimmed or whole UHT milk?

Emergency cream

In an emergency, I would use any milk I could get my hands on!
I'm a full-cream milk person, but whatever you want will be fine.

For truffles, try Italian mascarpone.
