Parmesan Mash

I'm making Delia's beef in Barolo with Parmesan mash tomorrow, it's a lovely recipe.

I'm wondering if i might make the mash in advance and re-heat when we're ready to sit down, however, I've always made mash fresh, have always thought it might not have a great texture on re-heating.

Has anyone done this, any tips, would you recommend or not?

Parmesan Mash

Hello Fish Wife,

When I make parmesan mash in advance I make the mash with the milk and seasoning then I reheat it in the oven with a few knobs of butter on top, covered with foil, until piping hot then I add the parmesan just before serving.
