Victoria sponge - crumbly sides!

I bake loads - mainly cakes like Delia's all-in-1 victoria sponge. I use quality ingredients and baking tins (Delia's)and the end result is always excellent. But the problem I get is that the cake sides can have a tendency to be crumbly. Sometimes it affects just part of the cake side an d not always all the way round it. I've experimented with various oven temperatures and shelf positions, beating mixture more/less, different flours etc. Any ideas on what to do to improve the appearance of the sides of the cake. Thanks.

Hello Country Baker,

It sounds like you have lots of experience with baking. I wonder if it might be that you have some hot spots in your oven. It might explain why it happens on part but not all of the edge.

Perhaps try them near the door with the tins close together to see if that works.

Thank you for your reply Lindsey. I will certainly try this although I thought that fan ovens were supposed to offer an even temperature throughout. I'm not able to get 2 x 8" tins quite side-by-side, so as an alternative, I will try baking just one right in the middle and see how that works.

Hello again,

Lots of members have told us that they have had sponges that are dry or overcooked or don’t rise using their fan ovens.
I’m sure that fan ovens are all different but generally we have been advised to always drop the temperature by 20 degrees when baking cakes in a fan oven.

So if you are not doing that already it's probably worth trying it.
