Ginger Cake

I have just made a Ginger cake which I need for 10 days time. I know they improve after several days of maturing, so I am uncertain as to whether to freeze it now and defrost several days before I need it to allow the flavours to develop or to leave it for a few days now to mature and then freeze it?

Any suggestions?

That's a difficult one. But I think I would allow the cake to mature a few days and get sticky, freeze it, and then take it out the day before you want it.
