Christmas Cake

Hubby and I have been weight watching this year but we still would like a Christmas cake.

I have a recipe that was my Dads' and wonder if it would be ok to just half the contents and maybe use some Splenda or suchlike instead of sugar?

I realise marzipanning and icing is going to blow the calorific value out of the water, but if we just made a smaller cake, it would help.

Thing is, can I halve the recipe and does that mean I halve the cooking time as I have read somewhere that is not necessarily the case.

For the sugar part I have read about Xylitol. They say can be used as a direct alternative to sugar because you use the same weight and it is a product made from natural ingredients. It has 40 percent less calories. I’m sure you will find out more if you Google it.

If you Google Weight Watchers they have a lovely recipe on their site for a Christmas Cake which I have used and would probably meet your needs.

Thanks Lindsey. I have never heard of Xylitone. Do you get it at the supermarket?

Thanks also for the alternative recipe, but I would really like to stick to our family recipe. :)

Hello Vee,

I thought that you could use the guide just for estimating the cooking time for your family recipe.

Waitrose have Xylitol although you may well find the same brand in your nearest supermarket.

Hello forest,

That’s a small cake. You don’t say if it’s square or round but if its square I think that it is probably near enough the 2 egg recipe quantity.

If it's round I think 1.5 eggs so you need to take the 2 egg recipe ingredient quantities (please forgive me if I am stating the obvious) and divide each of them by 4 then times by 3
