Can anyone advise as to the quanties for a 30x40 cm sponge recipe. Can I freeze it filled before finishing the outside icing? It's for a celebration cake.

Hello Ullycool,

For the freezing part of your question I would say definitely yes you could do that. For a cake mixture suitable for that size tin I can only give you may best guess, and I am happy to be corrected by members.

I would say make 2 layers of sponge cake and each should be an 8 large egg mixture. Assuming that you are making one cake at a time you can do one 8 egg recipe then if it seems too shallow do 3 cake layers and if it seems right just do two.
