Preserving roasted peppers

Hello all,

I have a lot of peppers and I would like to roast them and then preserve them. I've worked out how to roast and peel them, but I need advice on what to do to preserve them.

I imagine I need preserving jars and olive oil. Can I just put peppers in a jar and cover with olive oil, or do I need to add any other ingredient?

Hello Anushka,

I have not preserved grilled peppers in oil before. I have been told that home preserved peppers will inly keep for about 3 months when stored in sealed jars and kept in the fridge.

Personally I freeze them once peeled and add the oil and flavouring when they are defrosted.
