roasting pork queery

hello, I have a boned leg of pork weighing approx. 11 lbs to roast. I have found Delia's method but do I use a rack or just place it straight on the tin? which would you recommend?

Roast Pork

Hello Jo,

I would do it without a rack. Delia’s recipes were written for much smaller joints. For such a large piece I would give it it’s initial blast at 220C for 25 minutes then turn the heat down to 180C and give it just 20 min per pound (3.5 hours or so in your case). Check it is cooked through with a skewer (or a probe if you have one) then leave it to rest for at least 45 minutes before carving.
