Sugar free cakes?

I want to make cakes for my granddaughter who is nearly one , but she can't have sugar or honey in them . Can you just make a cake and leave the sugar out, or would it affect the way it turns out ?

That sounds tricky, Gravy Queen. Must make things hard for her (and her Mum!)

Can you use dried fruit to help sweeten things? Apple and Date cakes/slices are quite sweet without added sugar, but I don't know if the sugars in dates and apples would be a problem?

Hello Gravy Queen,

I would try muffins without sugar. The proportion of sugar is very low anyway so omitting it will have less effect. You could do mini muffins, which may be more appropriate (a one egg recipe will make 20 mini muffins and cook in 20 minutes).

Perhaps these apple muffins

and add some sultanas or chopped prunes (if as Sonya says she is allowed) and adjust or remove the spices depending on what your granddaughter likes. A teaspoon of vanilla extract will add a sweet flavour without adding sugar and they freeze really well too.

Ah spot on advice , thank you so much Lindsey and Sonya .

I will start with Delias spiced apple muffins, I love my Delia cakes book and these were the first things I made with great success gluten free . I was wondering if leaving the sugar out would upset the balance somehow .

I should have said, it's not that she is unable to eat sugar, her mum and dad don't want her to have any sugar added to the likes of cakes, she eats fruit and dried fruit with natural sugars in, and they have been advised not to give her honey just yet . (Not entirely sure why) .

I didn't realise too I could freeze the muffins so that's just perfect, I can make mini ones to have in for her .

Sugar free cakes?

Here's a suglarless, fatless, eggless fruit cake (the family call it The Less Cake) for perhaps when she's a bit older.

Although my almost 15 month old granddaughter would eat this.

Eggless, Sugarless, Fatless, Fruit Cake (gluten free option)

Ingredients:

8 ozs cooking dates (make sure you buy the stoned ones of course)

10 fl ozs water

1 lb mixed dried fruit

6 oz plain flour or 4 oz of polenta and 2 oz of ground almonds (extra to below)

3 tsps baking powder

2 tsps mixed spice

grated rind of 1 orange

4 tblsps orange juice (I’ve found there is enough juice when you squeeze the orange.)

2 oz ground almonds

Oh and I add whole glace cherries to this because I love them (probably about 4 oz).

Method:

1. Set oven to 160 celsius (less for a fan assisted oven)/325 fahrenheit or gas mark 3.

2. Grease a 2lb loaf tin and line with grease-proof paper. I now do mine in an 8 inch round tin and adjust the times, but it’s still roughly 1 1/4 hours. It’s supposed to be moist.

3. Put dates and water into a saucepan and heat gently until the dates are soft (or in a microwave) remove from heat and mash.

4. Add everything else and spoon into the tin.

5. Recipe says bake for 1 1/2 hours (keep your eye on it as it might not need this long), place greaseproof paper on top if browning too quickly.

6. Cool in tin.

Note: I reduced the cooking time considerably this last time and I think it was better. So check it after an hour and then give it the skewer test to see if it’s cooked at 5 minute intervals from then on.

I sprinkled mine with roasted flaked almonds, but I can see this could work with either walnuts in the cake or on the top too. Or sometimes just a thin sprinkling of demerara sugar.

Muffins freeze really well, GQ. I'm sure the fruit cake would too, if it lasted long enough!!

Honey - have you cooked this with polenta instead of flour? Just wondered if it would make it a bit drier?

Sonya, I did do it with the polenta just the once (out of curiosity and because I love ground almonds) and because I had something to compare it with, I decided it really wasn't quite as nice. It was a bit grainy. Perhaps it would be better just to use a gluten free flour. But Gravy won't have a comparison to make and it may be okay for her? But if you don't have to do the gluten free option, I would just use the flour. The addition of more ground almonds further down the ingredients does make it a lovely moist cake. Also the orange is good too... nice and fresh tasting.

Saffs, this isn't Syl's nutty one that you've done. That one is fabulous too, one of my favourites. Trying to remember if that's sugar free. I know it's fat free. I'll have a look and if it's sugar free, I'll put it on here.

The one you're thinking of has no fat and no flour Saffy, so that would be good for GQ, but not her granddaughter. So if GQ hasn't got Elpe's Fruit and Nut Cake (no fat & no flour) I'm sure Elpe wouldn't mind it being added here. But I would imagine GQ may already have it.

Sugar free cakes, except this isn't!

Very true Sonya. There will be a lot of natural sugar in that sugarless one.

I'll give you this one... no fat and no flour... in case you don't have it.

FRUIT AND NUT CAKE (no fat & no flour)

Best kept for a day or so before cutting. Freezes well. NB I've been known to substitute dates for prunes or flaked peanuts for almonds, depending on what's in my cupboard!

Ingredients:

3 eggs
4 oz sugar
4 oz porridge oats
1 tsp baking powder
4 oz dried apricots, chopped
2 oz ready to eat dried prunes, chopped
2 oz glac&"233; cherries, mixed colours, chopped
8 oz sultanas or raisins
4 oz hazelnuts or walnuts, chopped
2 oz flaked almonds

Line a 2 lb loaf tin with grease-proof paper and preheat oven to 160C/320F/Gas mark 2-3.

Beat sugar and eggs until creamy.
Stir in oats and baking powder.
Gradually stir in the fruit and nuts and mix well.
Press into the loaf tin and level the surface.
Cover with grease-proof paper and bake for one hour.

Sugar free cakes

That's the one Honey. This is a brilliant cake for energy boosting. S took it when he went to Marrakech for a mountain climbing holiday. Went down well during Ramadam when the guides were providing very little food.
