Baking Cases

Can you tell me why my cup cakes peel away from baking cases when they've cooled. I've tried different baking cases but it still happens and it wastes the look of them.

Hello Fran37,

There could be a few reasons for this….

The cakes are over baked and have contracted too much (this may be due to cooking in a fan oven where the temperature may need to be lower). Or perhaps there is too much butter in the mix or the mixture is too dry which could be resolved with a spot more milk.

I always use two baking cases per cake and I never have the problem.

Using two cases is a brilliant idea - I too have the problem of the cakes coming away from the sides of the paper cases. I will also try cooking them at a lower temperature and also adding a drop of milk.

Can someone please decide to add the equivalent fan oven temperature for recipes - some say reduce the oven by 10 deg and some say 20 deg. As for cooks on the television, they never say whether it is for a fan oven or normal electric oven. I've been baking for over 50 years and still find it irritating.

problems with cases

I also find when making small cakes they too peel away from the cake so why when making muffins they have the opposite problem, can't get the muffin out of the case :o(
