I am constantly confused by the array of cooking oils on the supermarket shelves! Which one do I buy/use for which job in the kitchen?

Hello EileenMD,

The oil you choose is mostly personal preference. We often like to use oils that are from the same country as the recipe originated.

However generally we use extra virgin olive oil (although it can just be olive oil or virgin olive oil) for sprinkling on salads and vegetables. We combine extra virgin olive oil with flavourless groundnut oil for mayonnaise and dressings.

Groundnut oil is suitable for frying.

There are 3 grades of olive oil.
