Red Pepper Tart

I would like to serve as a starter, when I have to prepare a lunch for friends. Can it (1) be served cold, (2) be made the day before. I love this tart, but have always served it after resting for ten minutes.

Hello Jeanne,

Yes you can serve it cold. If you want to make it ahead I would suggest you bake blind the tart case for 15 minutes then brush it with beaten egg (or egg white left over from the from the filling ingredients) then return it to the oven for 5 – 8 minutes until it is golden. Then fill the tart and bake it as you normally do. This way your pastry has a better chance of retaining its crispness.
I would then cool the tart and refrigerate it overnight (with a cover).

Then remove it from the fridge about 2 hours before you serve it so that it comes up to room temperature.
