Please help I have been asked to make my son's wedding cake and want to make Delia s recipe but it has to be non alcoholic . Not ever having made one before I am a nervous wreck he is getting married in December can the alcohol be substituted .

Wedding Cakes

Hello Olive,

You can substitute the alcohol in the rich fruitcake with fruit juice such as apple, grape or orange juice when you make the cake and I would not ‘feed’ it.

The cake will not last as long because the alcohol helps preserve it but if you have any that you would like to keep you could freeze it.

I would make it a couple of weeks before the wedding.
