How long will Delia's fresh pesto keep before using in Pesto rice salad?

I love this recipe but usually make pesto and rice salad at the same time. How long can I keep the fresh pesto before using?

Hello Anne Allen,

If you make Delia’s recipe as it is, put it in a small lidded container or jar, then smooth over the surface with the back of a teaspoon and pour over some nice olive oil to cover the surface. It will keep for several days in the fridge.

There is a trick used by many chefs to keep the pesto a bright green colour for longer. They blanch the basil leaves in boiling salted water for about 10 seconds, drain it and plunge it into iced water for 30 seconds. Then drain it again and dry it really well with kitchen towel and make the pesto as usual. Store it as above and it will keep for at least a week.
