Why muffins are scone-like?

Hi! I made blueberry muffins according to the recipe on here except I used a metal tablespoon to quickly fold the mix ( I don't have a bigger metal spoon as required by the recipe). The muffins turned out like scones rather than light and fluffy. They tasted a bit dry in the mouth. Any idea what I did wrong? I did try to quickly food in the flour and even counted to 15 out loud!

Hello Alee,

The muffins should be light, airy and moist however it is probably worth pointing out that they are nothing like the muffins you can buy in supermarkets, which often have a cake like texture. I assume from your post that you have followed the recipe online but you didn’t say if you have watched the cookery school video. If not please watch lesson 6 via the home page or via the following link to see if it helps. I have just watched it again and it shows exactly what you need to do.

Thanks Lindsey. Yes I watched the video a few times as the last time I made muffins they turned out harder than a scone. Perhaps I should fold with a larger spoon next time and add a little more milk. Thanks for pointing out these muffins are not like the shop bought ones, I had my suspicions especially when muffin recipes use a lot less butter.

Hello Alee,

The recipe has been thoroughly tested over many years so please, before you adjust any quantities, could you check your scales are accurate and when you measure your liquids make sure you check them at eye level and make sure your eggs are large.

If I you don’t have a large kitchen spoon you can use a spoon style spatula.

Scone like muffins

I would just say make sure your ingredients are fresh, including things like flour and baking powder . I use Delias recipe in her Cakes book with no problem , make them quite often now .
