Dairy free topping

Hi.

I have just obtained a copy of Delias cakes and read it from cover to cover. I notice that several recipes use mascarpone for a topping. Could you suggest a dairy free alternative please. I have tried butter cream made with pure margarine but I find it much too sweet.

Hello Trish40,

I haven’t actually tried these but you could try either Tofutti cream cheese or Pure Soya soft and creamy ‘cheese style’ spread to substitute Mascarpone. I have also seen some dairy free supermarket home brands on the shelves recently too.

How are the textures different?

I can't have dairy either, so am curious: how are the textures of mascarpone different from cream cheese?

Dairy free topping

Hello NateJ,

They have similar textures. Cream cheese is made from milk and cream and mascarpone is made from cream. I think Mascarpone is richer and sweeter whereas cream cheese has a slightly salty taste. Both of them can be used in either sweet and savoury dishes.
