Venetian Zabaglione Cake

I made Delia's Zabaglione cake and although it was delicious, it didn't look like the picture. Mine came out a coffee colour rather than the snow white. All was going swimmingly until I added the Marsala. Can you tell me Delia's secret ingrediant so that my next effort looks like hers.
