I have made Delia recipe for Florentines many times and they are the best ! bus sometimes when l make a batch, some go crispy and some stay soft, any idea what l could be doing wrong. I have a caf&"233; and l need to get them right every time; Thank you

Hello berger1,

I think there could be a few reasons for this.

Perhaps they are slightly undercooked or they are put into an airtight container either before they are completely cold or there is too much moisture in the air (from steam etc.).

I think Florentines bake best when you are only baking and not using the hob or dishwasher etc.

You probably know this but they do freeze really well if you want to cook in batches.
