Delia's Cakes

I made the Family cake from Delia's cakes and the cake was beautiful but all of the fruit went south to the bottom of the cake. I have made another one but with the same result. I would welcome your advise. Regards Patehemming

Hello patehemming,

This does happen sometimes. I think its because sometimes the fruit varieties in the mixed fruit packets are plumper and therefore heavier. Next time you make it perhaps you could fold in half of the fruit then sprinkle the top with the rest and poke it under the surface with a teaspoon as described in the cherry cake recipe.

I will try it too when I next make it.

Or dust fruit in SR? Or tip mix into three bowls, then fold in the fruit into each bowl in the inverse quantity the fruit is sinking by. So if 2/3 of the fruit is at the bottom, put 2/3 at the top and the other two bowls either equal or in a similar inverse proportion.
