Cake cookery

Can you tell me why my sponge cakes always develop a crust - I would like them to be nice and soft on the outside! Is it the fan oven?

Hello Jacks 58,

I think your fan over could be one of the reasons that your sponges have a crust although I have found that some ovens using conventional heat do the same too. However I have found that if I layer the sponges between baking parchment and put them in an airtight container until the following day the crust seems to lessen or disappear.
