Carrot Cake Carrots

I decorate my Carrot Cake with carrots made out of marzipan which I colour with strong food colouring not the runny stuff the stuff you only need a tiny dab of to get loads of colour. My problem is that the carrots leech colour all over the cake. I understand that this is because the cake and the topping are moist but is there something I can do to stop this? It does not happen to shop cakes using the same idea for decoration!

I don’t actually know the answer to this but perhaps the food colouring powders will work better that the colouring paste.

Marzipan carrots

I suggest that you make the carrots out of your marzipan well in advance - you can also use fondant. Let them dry & harden in a cool place & keep in a box with the lid loosened until you use them (so they don't sweat).

Allow the frosting to set before placing the carrots. Or better still, place them around the serving plate & only add to the slice when you serve. Placing them once they have firmed up a bit will reduce the leaching. And definitely don't put them in the fridge because it makes them more sticky as the condensation will rehydrate them & make it worse.
