Marscapone frosting

I am thinking of using marscapone for the first time. How long can you expect the cake to last with this type of frosting.
We eat it over the course of a week and I keep it under a plastic domed air tight cake stand.

Mascarpone Frosting

Hello Lola,

A cake topped or filled with a Mascarpone based frosting needs to be kept in a lidded container in the refrigerator. It will keep for a couple of days. If you need longer than that you could portion the cake and freeze it. This works well if you slice it then freeze it on a tray uncovered then wrap the portions in freezer film individually once they are solid.
