Coq au Vin

I have guests coming for dinner, one of which does not eat any red meat (including bacon.)I'd thought about doing Coq au Vin but omitting the bacon - my dilemma - is there anything else I could use to boost the flavour other than bacon? I think it will lack taste without it but then, I'm a commited carnivore. Any advice would be appreciated.

Coq au Vin

Hello Liz,

It will work without the bacon (I would increase the mushrooms and the onions, or even better replace the button onions with shallots) or another really good dinner party chicken recipe is this one, which we had at the lunch with Delia at the football club last Friday and everyone loved it.
