Wild Rabbit

I have been given a fresh wild rabbit (already skinned). Should I keep this in the fridge for any length of time or cook it straight away. I was thinking beef should be 'hung' - is the same true for rabbit? Thanks

You can use it immediately, it doesn't need to be hung. When I cooked a whole lot in a large stew, last year I was told not to bother with the front legs as they have so little on them.

It was the first time I had cooked rabbit in 40 years, as my OH doesn't eat it.

It was a bit of an ad hoc stew made with what was to hand. What did go down well was sliced apples fried in butter as garnish.

Hello melibee,

I think rabbit is hung whilst it still has its fur but I am happy to be corrected.

Fresh skinned rabbit will keep in the fridge for several days or a bit longer if it has been vacuum packed. Home freezing is not recommended, as it dries out the meat.

Melibee did say the rabbit had been skinned. It is usual to paunch and then skin a rabbit immediately after killing, because it is much easier then. They are not usually hung, I don't think.

She didn't say whether it was a butcher's wild rabbit, but if is already skinned, probably not.

It will be delicious wherever it came from.

Rabbit has no fat so really recommend you cook a piece of belly pork, or bacon lardons with it which keeps the rabbit moist and help to give it flavour. Lovely with some red wine introduced into the cooking. A good sprig of thyme maybe?

Aas Gerry says, no fat on Rabbits so bacon lardons are a good idea, Dijon Mustard is the usual addition, but a few weeks ago I used wholegrain mustard and slow cooked it with some white wine, mushroom and lardons....beautiful.
