Gluten Free Baking

I made the "Very Fruity Irish Tea Cake" from Delia's Cakes and it was a big success. I couldn't eat any as I only eat Gluten Free. This weekend I made the same cake with Gluten and Wheat Free flour and although it tasted fine, it was very crumbly like a Manor House Cake and I couldn't cut it into slices. What did I do wrong? Is this cake one that cannot be made with Gluten Free flour?

Dear Kitkat08,

When we tested this our tasters all said it was a successful as a gluten free cake. However it is fair to say that all the GF cakes do have a more crumbly texture.

I’m sure you didn’t do anything wrong.

I will run another test on this one when I can.

All of my baking is gluten free, and yes some work fine and some are more crumbly . A tip is to add a teaspoon of xanthan gum to the flour mix, some just need a little bit of this to hold them up better .

I am so pleased the xanthan gum worked, a lot of this is just trial and error. :-)
