Rich fruit cake

Could I have the quantities and cooking time for a 10" round Rich Fruit cake.(I do not have an 11" tin)Your table has 6,9, and 11".
I am making a wedding cake and want the cakes to be the same depth so do not wish to risk a guesstimate!

Dear Pegster,

The truth is I would be guessing too. The chart on this site is one that was tested so I would trust it but my answer to your question would be a guess, which is fine for myself, but as I cannot provide you with a tested recipe I cannot answer your question.
Personally I would calculate the liquid measurement of the tin (i.e. up to the level where the baked cake will be) then I would work out the quantities based on the ones given on the chart.

Thank you for your prompt reply I had hoped you might have had additional sizes to go with the published table! I might just have to buy an 11" tin! Would hate to have an uneven cake.
Will try and make the calculation out of interest.

I have had a few questions on the forum about making larger cakes, which I hope to put to the Head Pastry Chef at Delia’s Canary Catering next week. If he has some tried and tested recipes of Delia’s that he has increased I will come back to you.
