Why do my fruit cakes alway sink so much in the middle?

Hello JD50,

Assuming you have carefully followed a recipe I would say it is because it is under baked. Perhaps your oven is running too low and it hasn’t cooked through or it is running too high and you are taking it out before the centre has cooked. Or it could be that you’re opening the oven too soon or too often causing the temperature to fall.
