Wheat free cakes

Hi, In the new book it mentions that most of the cakes can be made with non-wheat flour blends. What it doesn't make so clear is whether the amounts of flour to liquid /fat are the same? So where the lemon drizzle cake needs 175g of fat, flour and sugar, would I just replace the flour with 175g of wheat free blend? Many thanks for your help. =]

Hello Julie,
Yes that is exactly how we tested it. We substituted any ingredients that contain gluten for the equivalent of gluten free ingredients but kept all the quantities the same. The recipes that didn’t work are marked with an asterisk on the contents page and where the recipe called for wholemeal flour we used white gluten free. The Double Lemon Drizzle Cake worked very well using GF flour and baking powder.
