Cheeseless Cauliflower Cheese

Cheeseless Cauliflower Cheese

I invented this as an alternative for a family member who doesn't like cheese!

1 Cauliflower
1 tin Heinz chicken soup
2 rashers of bacon, diced
1 onion, finely chopped
A little olive oil
1 packet of crushed potato crisps

Steam the cauliflower whole until tender.
Meanwhile fry the onions and diced bacon gently in the olive oil. Add the Heinz chicken soup and warm through.
Transfer the cauliflower to an oven-proof dish and pour the sauce over.
Scatter some crushed potato crisps over the top and pop into the oven for a few minutes to brown.

Nice served with a green salad. Cheese-lovers can add some grated cheese with the crushed potato crisps before baking in the oven.
